Fresh Bean Soup!

Not going to lie. Salvadoreans eat beans every week. I grew up eating fresh beans, and if I ever use canned, then I must be short on time or beans. I make a small pot, which lasts about a couple of days to a week.  

Ingredients: 

1 cup of dried beans

1 garlic clove, minced

3 TBSP of onion, small diced

1/4 tsp of dry oregano

2 tsp of salt (or a bit more to taste)

1. Soak beans overnight. Or follow the instructions on the bag. They must be rinsed! If you keep the water that you soaked them in, you will be gassy. 

2. Add them to a small pot. Add onion, garlic, salt, and oregano. Simmer over medium heat for about 1 hour and 1/2 or until the bean has a soft bite. Keep adding water and stirring. You do not want to let the water boil down.Taste for salt. 

Enjoy with some cheese and avocado! Or use them in salsas, veggie burgers, and salads.
